Asparagus is one of the best natural sources of folic acid, vitamins A, C and K, some B vitamins, potassium, phosphorus, and glutathione, which is a potent antioxidant and anticarcinogen.
I read that sentence yesterday and it is true enough.
But it sounds so scientific. Let us also celebrate the delicious goodness that is garden fresh asparagus–which cannot be captured in nutrient descriptions.
Last year by this time we were harvesting four or five pounds of asparagus per day. This year we’re still staring at a bare patch. Those few spears that dared to peek out a few days ago were killed by the cold. So the rest of it is patiently waiting beneath the surface.
This unseasonably cold weather has delayed all our spring planting and has left us thus far asparagus-less.
We’re ready for the eruption.
